When celebrating a birthday are good opportunities to make cakes that fit everyone. So I made some gluten free goodies, without refinded suger. I use coconut sugar but you can also use honey if you’re not vegan.
It was a try-out to use gluten free bread-mix, but the original recipe with soya-flour is the best i ever made. The bread mix worked – disadvantage was that the next day it was actually too dry. That’s a good tip if you like improvising like me 🙂
- 5 cups soya flour
- ¾ tsp baking soda
- ¾ cup butter or coconut butter
- 1.25 cups coconut sugar or honey
- 1 cup cocoa powder
- 1 tsp vanilla extract
- 3 eggs
- 1 cup hazel- and cashewnuts (optional)
175 degrees, 1 hour.
